Few weeks ago I bought some kangkong but never got to cook them. I felt bad having to throw them away. What a waste. As a kind of redemption, I cut the root and plant them in one of the few empty pots on our balcony. What a feeling watching them grow. Hubby said it's about time to cook the kangkong but I'm going to wait for a few more days so they'll grow a bit more leaves. Then I probably can make one vegetable dish from my first kangkong. Otherwise, it'll be too little and I may have to add it into a fried rice or something.
I think I should make something special with my first kangkong. Hmmm... maybe a sotong kangkong dish :) Not the Penang style sotong kangkong. I prefer white squids. Hopefully I'll remember to take some photos before we gorge it.
